Savory Sweet Potato Squares

These crackers are made with whole grain flour, olive oil, and fiber-rich spices that contain high amounts of vitamins A and C, as well as antioxidants. You will need the following ingredients:

  • 1 cup of sweet potato purée

  • 2 cups of whole wheat flour

  • 1 teaspoon of baking powder

  • 1/2 teaspoon of salt

  • 1/4 teaspoon of black pepper

  • 1/4 teaspoon of garlic powder

  • 1/4 teaspoon of onion powder

  • 2 tablespoons of olive oil

  • 2-3 tablespoons of water

  • Optional: You may add dried rosemary, thyme, oregano, basil, or any other herbs of your choice as per your preference.

To prepare this snack, follow these steps:

  1. To make sweet potato purée, boil a large sweet potato until soft. Mash or blend until smooth. Or, roast in the oven at 200C/400F for 45 minutes, then purée. You'll need one cup.

  2. To begin, set your oven to preheat at 180C/350F.

  3. In a large bowl, combine flour, sugar, salt, pepper, garlic powder, onion powder and any desired herbs.

  4. Mix sweet potato purée and olive oil into dough. Add water if too dry, flour if too sticky.

  5. On a lightly floured surface, roll dough as thin as possible to about 3-4 mm. Cut shapes with a cookie cutter or knife and place them on the baking sheet.

  6. After baking for 15 to 20 minutes, the crackers should be golden and crisp. Allow them to cool to room temperature on a cooling rack before placing them in an airtight container. You can store the crackers for up to a week.

Tips:

  • You have the option of using gluten-free flour rather than whole wheat flour. However, this substitution will result in less fiber and more gluten in the crackers.

  • Experiment with various seasonings and flavors such as paprika, cumin, curry powder, cinnamon, and nutmeg to add more excitement to your crackers.
